Relations of food and beverage with other
department, usually in food and beverage divided be some section, and each
section have a different duty, basically the sections consists of some section
:
- Restaurant
- Bar
- Room Service
- Banquet
- Steward
This sections have a good relations
with food and beverage, beside have a relations with this sections, food and
beverage have relation with other department
1.
Front office department ( FO )
1.
F.O will inform to all department
about amount of guest will stay in hotel, guest check in or Check out and
important guest, so that F & B will used the information as a guide in
operation
2.
F.O will sell the product of F&B
( product, and service ) to guest will come to hotel
3.
F&B prepared the welcome drink
for new guest will come in hotel
2.
House Keeping department ( HK )
1.
H.K will prepared the linens (table clouth , napkin,
skirting ) be require by F&B service
2.
H.K will Cleaned the area of F&B
service
3.
H.K will prepared vas flower be
require by F&B service
4.
Prepared the menu in guest room (
room service menu )
3.
Accounting Department
1.
Accounting will prepared the cashier
2.
Accounting will buy and prepare the
amount of cost required by F&B both the cost of food and beverage
4.
Human Resource Department
concerning the problem Personal of employee F&B
Department such as recruitment employee, promotion of position, salary, Etc.
5.
Marketing and Sales promotion
Department
In hotel
this section have good relation with other company to promotion the meeting
room and food, managed by F&B Department in hotel.
6.
Bar
Bar is one
of section in F&B Department same as kitchen and steward, every drinks both
not contains
alcohol or
contains alcohol was prepared in bar, except Tea or coffee was prepare in
pantry
7.
Kitchen
Restaurant
is one of section in F&B Department with good relation with kitchen,
because all of guest order in food processed in kitchen, and the result of
processed food served very influential to guest satisfaction with good support
in service
8.
Steward
This
section on duty in cleaned the cutlery in restaurant, be liable to keep
cutlery’s clean in F&B department to support fluency of guest service
9.
Laundry
Uniform, napkin, table cloth,
skirting place mate, and etc same as cloth for necessary
Restaurant operational is prepared
by Laundry. Include washing, ironing, and repairing
10. Purchasing
This
section on duty in buy and order material and stuff require by each department,
like all item for kitchen, mineral water and other material for bar and snack
for mini bar, amenities housekeeping, etc
11. Engineering
On duty in
prepared decoration lamps, especially in special event, AC, Loudspeaker,
refrigerator, ice- making machine,
cold storage¸ telephone, repair of door hinges, window, drawer, etc. for
restaurant need is handled by Engineering
